Butter Corn


Preparation Time:20 min.
Cookintg Time: 10 min.
Yield: serves 5 people
Ingredients:

fresh corn :3
butter 2 tsp.
salt to taste
pepper powder 1/4 tsp.
cilantro 5 sprigs (chopped)

Method :
cut the corn or take out with the hand off the cob
heat a frying pan and add the butter
when the butter is heated add the corn
saute it for 5 min
add the salt and pepper powder and saute the corn for 5 more min. or until tender
switch off the stove and garnish with chopped cilantro
enjoy as a healthy evening snack

Ugadi Pachhadi


This is a recipe reflecting our different expierences in life.We in life at different phases of our life expierence happiness, bitterness ,tough and hard times. This Pacchadi  is made on Ugadi Day ,which is the Telugu  New Year .This recipe has all tastes  signifying that life is a bouquet of all  expierences
Ugadi Pachhadi  has all the 6 tastes .Ugadi Pachhadi has sweet,bitter,salty,sour,pungent and astringent tastes.

Preparation  Time:1 hour
Cooking time  :No cooking required
Serves 10 people

Ingredients:
1 cup Jaggery
1 cup  mango pieces
tamarind small ball size of a lemon soaked in warm water
1 tsp neem flowers
 fresh coconut pieces  1/2 cup
salt accoring to taste
red chilly powder 1/2 tsp or according to taste

Method:
cut the jaggery into small pieces and soak it in 1 cup water
clean and peel the mango and cut into 1/2 inch pieces
squeeze  the juice from the tamarind and keep aside
pluck the petals from the neem flowers
Take a new pot or a big bowl and add the  above ingredients
add to it salt and chilly powder
add 2 cups water
first offer it to God and drink it with all the family members in small glasses

Garlic French Fries


Preparation Time: 20 min
Cooking time :30 min
Yield : serves  5

Ingredients:
potatoes (big): 3
Oil for deep frying
garlic cloves 2
butter 1 tsp.
salt to taste
cilantro 5 sprigs (chopped)
pepper powder  for sprinkling

Method:
wash the potatoes and peel them  and keep them in water
cut the potatoes lengthwise into 1/2 inch pieces
cut these pieces into thin strips
put them on a paper towel
cut all the potatoes in the same way and place them on paper towel
heat oil in a wok and add the potato strips and fry them till they are crispy
drain them on a paper towel
peel the garlic and mince them
heat an another frying pan  add the butter and fry the garlic mince
add the fries and saute them for a min.
switch off the stove and garnish with chopped cilantro and pepper powder


Note:
these fries can be made without deep frying
Preheat the oven to 400*F
take a non stick baking sheet and apply  1tsp.butter to it
place the potato strips in a single layer on the non stick baking sheet and coat the potato fries with 1tbsp.  of olive oil
place the baking sheet in the oven for 10 min
turn the fries and bake them for another 15 min.
turn off the oven and cool the fries on a cooling rack
in a pan ,heat butter and add garlic mince and when it turns a little brown add the fries and saute them for a min.
garnish with chopped cilantro
enjoy them without the guilt of oil

Flower Kaja(Panasa Thonalu)


Preparation Time : 30 min.
Cooking time :20 min
Yield:20 Flower Kajas

Ingredients:
 All purpose flour 2 cups
sooji 1 tsp.
salt a pinch
ghee 2 tsp.
Water to knead the flour
sugar 1 cup
water 1/2 cup
cardamom powder 1/2 tsp.

Method:
In a mixing bowl take the all purpoe flour  add to it the sooji,ghee,salt and knead the flour with the required amount of water
the dough should be soft to roll into puris
divide the dough into 20 small balls
roll each ball into a puri and make 6 or 7  slits lengthwise
roll it loosely to form the shape  of a flower
Repeat the 2 steps for all the puris
deep fry them in  batches of 6
take sugar in a saucepan and put 1/2 cup water in it bring it to a boil
 when the syrup is sticky add the cardamom powder. switch off the stove
then  add all the flower kajas and leave them in the syrup for 5 min
 Take the flower kajas from the syrup and place them on a plate apart
enjoy them as a evening snack

Vermicelli Pasta (Semiya Upma)


Preparation time :10 min.
Cooking time: 30 min
Yield: for 4 persons
Ingredients:
2 cups Bambino Vermicelli
peanuts 1 tbsp.
2 red chillies
3 green chillies
1/2 tsp. zeera
1/2 tsp. mustard seeds
1/4 tsp turmeric
salt to taste
urad dal 1/2 tsp.
water to cook the vermicelli pasta:4 cups
oil 1 tbsb.
cilantro 5 sprigs chopped
curry leaves 5
cheese 1/2 cup for garnish
Method:
in a sauce pan bring water to a boil
put  another pan on the stove when it is heated add the oil ,add the peanuts ,zeera,mustard seeds,urad dal and fry them till they are lightly roasted
to this add the green and red chillies and fry them a little
add the turmeric and fry it
now add the vermicelli and roast it till it becomes slightly brown
now add sufficient water to the vermicelli and cook it till it is tender
it may take 7 to 8 min
switch off the stove and garnish with chopped cilantro and curry leaves
take it in a plate  and sprinkle with shredded mozerrella cheeese

Laddo (Ball shaped sweet)


 Preparation Time :30 min.
Cooking time:30 min
yield: about 20 laddos
Ingredients:
besan 2 cups
baking powder 1/4 tsp.
water to prepare the besan batter
salt a pinch
sugar 11/2 cups
1/2 cup water to make sugar syrup
ghee 1 tsp.
cashews 10 fried in ghee
almonds 10 chopped
oil for deep frying
elaichi powdered 1/2 tsp.
green color for last batch of batter  5 drops
Method:
take besan in a mixing bowl add to it baking powder,salt and then  add water little by little to make a paste of pouring consistency
heat oil in a frying pan and take a strainer with 1 cm holes and put on top of the heated oil
scoop the batter with a ladle and pass it through a strainer

the batter will drop into the oil in the form of balls
fry the balls till they are light golden yellow and take them out of the oil

repeat this process for all the batter
after you are done with frying all the balls
take sugar and water in a saucepan and bring it to a boil
boil the syrup till you get half thread conistency(when you take the syrup in between your thumb and index finger the syrup should form a  thread and break when you take the fingers apart)
put the balls in the syrup and take the mixture away from the stove
add the ghee,fried cashews,chopped almonds and elaichi powder and mix it well
let the mixture cool down a little
take water in a little bowl
first wet your hands and take the laddo mixture in both hand and press it in shape of a laddo
repeat for all the laddo mixture
let the laddos dry on a plate for some time
store them away to be enjoyed with family and friends

 

Matri (Salted Crackers)



 Preparation Time: 10 min
Cooking Time: 45 min
Yield: about 50 matris
Ingredients:
All purpose flour 2 cups
water to knead the flour
salt according to taste
red pepper powder 1/4 tsp.
butter 1/2 tbsp. at room temp.
baking powder 1/2 tsp.
oregano seeds 1 tsp.
zeera 1 tsp.
oil for deep frying
Method:
Take all purpose flour in a mixing bowl
add all other ingredients to the flour ,add water  little by little and knead the flour
cover the dough and rest it for 1/2 hr.
the kneaded dough should be tight like the dough we make for puris
divide the dough into 50 parts
make each part into a round even circle
roll the dough into a 2 inch puri
prick the puri with a fork several times
repeat this process for all the puris
heat oil in a wok and fry 10 matris at a time on med. heat
fry them until they turn golden on both sides
drain them on a paper towel
enjoy them hot with chai-tea!!!
