Spicy Corn fritters(Makkajonna garelu)

Yield: makes 20 vadas
Ingredients
  fresh corn (prefrerably with hard seeds) 3
corn flour 1 cup
rice flour 1 tbsp
salt to taste
green chillies 3
ginger garlic paste 1/2 tsp
onion 1 cut into small pieces
cilantro a small bunch chopped
curry leaves 10 chopped
zeera 1 tsp.
pepper powder 1/4 tsp.
garam masala powder 1/4 tsp.
asofoedita a pinch
oil for deep frying fritters
Method
 peel the corns  with hand or cut them with a knife
to the corn add the chillies ,zeera and grind them to a fine paste
to this add salt,asofoedita, ginger garlic paste,garam masala,pepper powder,rice flour, 1/2 cup corn flour and mix them well
add chopped onion, cilantro and curry leaves to the dough


if the dough is still watery add the remaining corn flour

heat oil in a kadai
now take a small amount of dough on a ziplock bag and press it into flat rounds

put these into the  hot oil

when one side turns golden yellow turn to the  other side and fry

fry these in  batches
drain them on paper towel
enjoy with tomato sauce


 

Karam Pusa(Spicy fried noodles)

Yield: makes 4 cups
ingredients
2 cups besan(gram flour)
2 tbsp. rice flour
1/4 tsp.pepper powder
1/4 tsp. asofoedita
salt to taste
a pinch red chilli powder
butter 1 tbsp.(melted)
water to knead the dough
oil for deep frying
Method:
take the gram flour and rice flour in a mixing bowl
add the melted butter ,asofoedita,salt,pepper powder,chilli powder and blend them into the flour
take 2 cups water and heat  for 1 1/2 min in microwave
add the lukewarm water to the flour and knead to make dough
 take Indian snack maker Press  and put sufficient dough

heat oil in a kadai and press the noodles into the hot oil
when they turn a little golden take them from the oil and put them on a tissue paper
repeat the process till all the dough is complete
enjoy with your chai

Puri(wheat tortillas fried in oil)

Preparation Time:20 min.
Cooking Time: 20 min
Yield: makes 20 puris

wheat flour 2 cups
oil 1 tsp
water to knead the flour
oil for deep frying the puris
dry flour for rolling the puris

Method
take flour in a mixing bowl
add oil to the flour
pour 1 cup water and knead the flour
pour  a little more water to make a soft dough
take the dough and make it into small balls of size of a lime
take a stone and roll the dough into puri with a rolling stone
repeat the process
take oil in a wok and heat it
when it is hot put 1 puri at a time and fry it
fry all the puris
enjoy with chole

Mango panakam(juice) and puri

Yield: makes  4 bowls of juice

mangoes 2
sugar 1/4 cup
elaichi powder 1/4 tsp
1/4 cup milk
Method:
peel the mangoes


cut it into pieces

blend the pieces in a mixie
add the sugar,elaichi powder and milk and grind it again

scoop it in a bowl
serve with puri
 

Beetroot Rice

Yield: makes 1lb  of rice
beetroot (big) 1
Serves 4
rice 1 cup preferably basmati rice or sona masoori rice
whole masalas: 2 cloves,2 cardamom,1/4 tsp. zeera,1/4 tsp.shahzeera,1/2 inch stick cinnamon
salt to taste
2 green chillies
oil 2 tsp.
butter 3 tsp.
onion 1
ginger garlic paste 1/2 tsp.
for garnish : chopped cilantro 10 sprigs chopped
Method:
wash the rice and soak it in 2 cups of  water for 1/2 hr
wash and peel the beetroot and grate it and keep it
take oil in a pan and wait till it is heated
add the whole masala and fry them till they release their distint flavor
add the chopped onion,green chillies and ginger garlic paste and fry them
next add the grated beetroot and fry it till it is loses its rawness
add the rice with the water
bring it to a boil
simmer the stove and cook the rice till it is completely done
cover the rice
the basmati  rice will take 10 min .to cook
switch off the stove and garnish with chopped cilantro
enjoy with mango pickle and curd
