Dondakaya fry





Preparation Time:20 min.
Cooking Time: 20 min
Yield: Serves 4
Dondakaya 250 gms.
Green Chillies 3
 Red chilles 2
Onion 1 med.size
Sesame seeds 1 tbsp.
Dessicated coconut 1/2 tbsp
Salt to taste
Ginger garlic paste 1 tsp.
Zeera powder 1 tsp.
Zeera 1 tsp.
Mustard seeds 1 tsp.
Chilli powder 1/2 tsp
Cilantro  leaves 1/4 cup
Khari patta 1 sprig
Method of Preparation
  1. Wash the Dondakaya and cut it into 8 pieces lengthwise.
  2. Cut onion into small pieces.
  3. Put a pan on a stove and after it heats up add the oil and give it a tempering of Zeera and Mustard seeds.Add Ginger garlic paste and fry it a little.
  4. After they crackle ,add the red Chillies and Green Chillies and saute them.
  5. Then add Onions and cook it till they are Transparent ,then add the dondakaya pieces.Cook them on a low flame for 10 min checking to see if they burn up.Cover the pan to cook the Donadkaya  throughly..Add a little sprinkling of water if necessary.
  6. In anothe pan dry roast the Sesame seeds .Add the dessicated coconut and grind them together to a fine powder.
  7. Add this powder  to the curry and mix it well.Cook it for another 10 min till the Dondakaya breaks easily when you mash it,Add a little water if necessary.
  8. Swich off the stove and garnish with Cilantro and Kharipatta.
 

Bendakaya fry(Okra fry)

Yield: makes 400gms curry 
Okra 250gms
Onion 1 med. size
Green chillies 2no's
Red chillies 2 no's
Zeera 1 tsp
Mustard seeds 1 tsp
Garlic 3 pods minced
Oil 2 tbsp.
Salt to taste
Cilantro 10 sprigs separate only leaves
Khari patta 1 sprig
Method of preparation:
  1. Wash the Okra throughly.
  2. Cut off the top and bottom part of the Okra.
  3. Cut the Okra into 1/2 inch pieces.
  4. Put oil in a pan,,put it on med,heat.
  5. Give a tempering of Zeera and Mustard seed.
  6. Let them spplutter a,then add red Chilles fry them a little .
  7. Then add Green Chillies and fry them.
  8. Add the Onions and saute them till they are transparant.
  9. Add the Okra pieces and saute them till they become dark green in colour
    .This process may take 5 min,
  10. Add the salt and minced garlic and cook for 5 more min, on med. heat.
  11. Swich off the stove when the Okra are all cooked and tender.
  12. Garnish with Cilantro and Khari patta
  13. Can be eaten with Rice and Sambar or with Rotis.

Gutti Vankaya Kura


 


Preparation Time:20 min.
Cooking Time: 20 min
Yield: makes 1lb 


Ingredients

Small size purple or green brinjals 250 gms
Onion 1 med.size
Turmeric powder 1/4 tsp.
Sesame seeds 1 Tbsp.
Zeera powder 1tsp.
Dessicscated coconut 1 Tbsp
Ginger garlic paste 1 tsp.
Tamarind paste 1 tbsp..
Green chillies 2 no.'s
Red chillies 1 no.
Chilli powder 1/2 tsp.
Salt to taste
Garam masala powder 1/2 tsp.
Coriander powder 1 tsp.
Cilantro 10 sprigs
Khari patta 10 leaves
Oil 2Tbsp.
Method of Preparation
  1. Wash the brinjals.Cut them in half lengthwise. Make a slit lengthwise and soak them in salt water
  2. Cut the onion into small pieces.
  3.  Heat oil in a pan,add the whole brinjals in it and saute them till the change color on med. heat.
  4. Next add the onions to the oil and fry them till they are tender.    Dry roast the sesame seeds for 5 min.add to it dry coconut and grind to a smooth paste.
  5. Add this paste to the  brinjal mixture and cook for 2 min,
  6. Add the ginger garlic paste,jeera powder,coriander powder,chilli powder,salt,turmeric powder to the pan and cook for 2 more min.
  7. Add the tamarind paste and add 1 cup water and mix it throughly and cook on low flame for 15 min. or till brinjals are tender and juicy.Check if there is enough water,every 5 min.
  8. Add cilantro sprigs and kari patta and switchoff the stove.

Paneer Butter Masala

Yield: makes 1lb

Paneer (7 oz or 198 gm)
Whipped cream 1 tbsp
Cumin seeds 1tsp
mustard seeds 1tsp
Onions (med . size) 2
Tomato 2 nos.
Ginger garlic paste 2 tsps
Coriander powder 1 tsp
Garam masala powder 1/2 tsp
Green chillies 2 no.'s
Butter 1 tbsp
oil 1 tbsp
Cilantro 10 sprigs
Method of Preparation
  1. Wash Paneer in cold water.Cut it into small pieces.Keep it aside.
  2. Cut onions into small pieces.
  3. Put  a pan on the stove and heat it.Add oil and put the onion pieces into it .When they turn transparent put the tomato pieces and cook them till tender.
  4. Take these in a bowl and let them cool.Then put it in a blender and make a paste
  5. Now take the butter in the same pan .Put some Cumin seeds and mustard seeds and let them splutter ,add the green chillies,coriander powder, the tomato and onion puree and let it cook for 1 min on med. heat..
  6. Add ginger  garlic paste,salt and chilli powder and cook it till it releases flavor.Add 2 cups of water ,when it comes to a boil.Add the Paneer pieces and mix it throughly.
  7. Cook for 15 min.  on med. heat or till the paneer pieces are cooked.
  8. Add the garam masala powder and the cut cilantro.
  9. At last,add the whipped cream and shut off the stove.
