Ingredients
Small size purple or green brinjals 250 gms
Onion 1 med.size
Turmeric powder 1/4 tsp.
Sesame seeds 1 Tbsp.
Zeera powder 1tsp.
Dessicscated coconut 1 Tbsp
Ginger garlic paste 1 tsp.
Tamarind paste 1 tbsp..
Green chillies 2 no.'s
Red chillies 1 no.
Chilli powder 1/2 tsp.
Salt to taste
Garam masala powder 1/2 tsp.
Coriander powder 1 tsp.
Cilantro 10 sprigs
Khari patta 10 leaves
Oil 2Tbsp.
Method of Preparation
- Wash the brinjals.Cut them in half lengthwise. Make a slit lengthwise and soak them in salt water
- Cut the onion into small pieces.
- Heat oil in a pan,add the whole brinjals in it and saute them till the change color on med. heat.
- Next add the onions to the oil and fry them till they are tender. Dry roast the sesame seeds for 5 min.add to it dry coconut and grind to a smooth paste.
- Add this paste to the brinjal mixture and cook for 2 min,
- Add the ginger garlic paste,jeera powder,coriander powder,chilli powder,salt,turmeric powder to the pan and cook for 2 more min.
- Add the tamarind paste and add 1 cup water and mix it throughly and cook on low flame for 15 min. or till brinjals are tender and juicy.Check if there is enough water,every 5 min.
- Add cilantro sprigs and kari patta and switchoff the stove.
